This dish is easy to prepare and also relatively healthy. You can serve it as a salad or a main dish.

Chicken or Turkey Meat

The recipe calls for steamed chicken, but you can replace it with turkey. Don’t be surprised by the amount of ginger, it just adds a nice aroma and flavor, but if it’s too much for you, you can use less.

Cucumbers need to be crushed with something, but not completely mashed. Just enough so that they crack a little and release the juice.

Do Not Skip The Dressing

I wrote that this dish is relatively healthy, because mayonnaise goes into the dressing, but only one spoon, and no one has gained weight from just one spoon of mayonnaise, so definitely do not skip it. I also do not recommend replacing peanuts with any other nuts. They would taste even better when you toast them a little.

How to Serve This Dish?

Crushed cucumbers go on the bottom first, then meat and dressing on top. It’s such a light meal. It’s great as a salad, a main dish without a side dish, but you can add fried potatoes or rice.

Ingredients
  

  • 200 g chicken meat
  • 1 tbsp sake (or dry white wine)
  • 8 g fresh ginger
  • 1 medium-sized cucumber
  • Salt

Na dresing:

  • 1 tbsp mayonnaise
  • 10 - 15 cm green part of spring onion
  • 1,5 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1/2 tbsp vinegar
  • 2 tbsp toasted sesame seeds
  • 10 - 15 g unsalted peanuts
  • Grated ginger (optional)

Instructions
 

  • Cut the chicken into smaller pieces and place in a bowl (a glass one is suitable, or a something you can use for steaming). Salt the meat and add sake/wine and ginger. I recommend cutting a piece of ginger into few slices and the rest of ginger finely grate for more aroma. Mix well and let it steam.
  • In the meantime, prepare the dressing. Crush or grind the roasted sesame seeds, but not completely into dust. Roast peanuts and cut them into small pieces. Finely chop the green parts of spring onion and mix it with all the other ingredients for the dressing.
  • When the meat is ready, cut or tear it into smaller pieces.
  • Cut the cucumber into approximately 4-5 cm long strips, put it in a stronger ziplock bag and crush it, but not completely to a mash.

  • Let's serve. First cucumber, then the meat an pour over the dressing.
